What I Ate Wednesday

Wednesday, we meet again! Another chance to take a peek at what I’ve been shoving into my big pie hole since last Wednesday. Mmm pie. Beware, I eat a lot of the same stuff because, well, I like it. And I do what I want. But I’m trying to get a bit more creative in my kitchen when I have time!

Super fast lunch before work.. japanese sweet potato (the absolute BEST), kabocha, broccoli, and deli turkey.


Oh man, this was absolutely amazing. I took a pita and baked/broiled it in the oven until it was a bit crispy. Then I added black beans, scrambled eggs with spinach, mushrooms, and zucchini, and topped with cheese. THAT CHEESE.


Drowning myself in coffee all day, errrrday.


Multi-grain wrap with laughing cow spicy cheese (delicious), veggies, and grilled chicken. Overflowing as usual, so I ended up folding it like a taco.


My thick protein ice cream shake in an almost empty peanut butter jar topped with cheerios. Best idea ever.


Super simple, but honestly one of my favorite meals. Butternut/kabocha squash, brussels in coconut oil, and a turkey burger.


Fluffy pumpkin protein pancakes topped with coconut butter. Match made in heaven.


Another one of my shakes topped with salty nuts. Mmmm.



Simple breakfast – plain fage greek yogurt, strawberries, frozen grapes, and cheerios. Yeah, I love cheerios haha.

  1. Oh girl, this pizza looks heavenly!! That cheese!
    I love goat cheese a lot, I had a toasted sunflower seeds bread slice spread with goat cream cheese and tomato slices just this morning – still salivating over it!!
    We also have a cheese here in Germany that is called “Harzer” (from the German region/mountains “Harz”), sometimes called “HandkΓ€se” = hands cheese, it is naturally no-fat and no-carb, and is traditionally paired with cumin, and there is a dish where it is paired with oil and vinegar, and lots of onion. I like that cheese in my omelettes (which is my favourite simple meal;-) ), it melts so perfectly!
    And I love grapes lately, because there are in season!! I live in a vine region and the grapes are sooo good. I’ve never eaten them frozen, I prefer them straight from the vineyard πŸ˜€

  2. I am all over kabocha squash lately!! It is in full season and since this lasts only a few weeks I am hoarding like crazy.
    I also love omelettes as a quick meal. But seriosuly, we SO have the same taste, I wouldn’t mind moving in with you πŸ™‚
    Favorite cheese – a spicy Swiss cheese which probably no one knows over there πŸ™‚ We live in Cheese and Chocolate Paradise, I don’t complain about that.

      Yesss I bought like 5 when I went to trader joes last time LOL! Ummm lets be roomies. I’ll come there though, i’ll be all over that cheese and chocolate! πŸ˜‰

  3. Sweet potato and kabocha all on one plate? That’s the dream meal! I’m literally eating all the root veggies right now and loving every mouthful. I can’t really beat my beloved eggs for simple meals – usually I scramble them in the microwave if I’m really short on time, plop them on some veggies, add a dollop of nut butter and I’m good to go!

    Oh and cheese? Don’t make me choose! Camemzola (I think that’s it!) is an amazing one – a mix of camembert and gorgonzola – drooool…

  5. I saw that pita pizza on IG and was like daaaayyyyyuum. And I may or may not be talking all about pizza on my blog today. No shame. I too am big on omelets–you can make them just how you want and have some fun with it. Also quick pan seared fish and stirfry is a get option, and you can make a great protein peanut sauce while everything is cooking.

  7. All those meals look delicious. Frozen grapes are the best, and goat cheese is probably my favorite! Sooo good

  8. My favorite go-to meal is wraps! The possibilities are endless. Lately I have been loving my burrito combo (chicken, guacamole, salsa, peppers and onions, Greek yogurt) or an egg wrap (Egg Beaters, cheddar cheese, roasted veggies, ketchup). Can’t go wrong!
    My favorite cheese is either feta or cottage cheese. That counts, right?
    And believe it or not… I don’t like grapes! Really! I am just not a fan. I have had a few sips of vino, which I enjoyed, but regular old grapes are just not my thing.

  9. Same stuff or not, boring is definitely one word that does NOT come to mind when looking at your meals! And grapes are one of the few fruits that I actually prefer unfrozen, but give me a bag of frozen blueberries or mangoes and I’ll probably eat it until it’s all gone…
