Vacation Mode and Recent Eats

Hello, Happy Monday! Yes, it’s happy, because I’m on summer vacation 😉 Heck yes. I leave for Dallas on Wednesday, stay there for a night (I have a job interview), come back home the next day and then fly out to Northern California for a week. I CAN’T WAIT. It will definitely be a busy week!

I have already been in my vacation-mode mindset. This weekend was spent on the beach, relaxing, some workouts, and a lot of good food. Here’s a glimpse into what I’ve been doing and eating lately.

I have been LOVING this dinner lately. I just put a shit-ton of veggies in a pan with coconut or olive oil and sauté them up, add spaghetti squash and crushed tomatoes, then add a protein (turkey or shrimp is the bomb) and there you have it! So delicious.

Literally obsessed with Salmon lately. I’ve been buying it about once a week because it’s been on sale. It’s my favorite.

Murdering my legs/glutes which is my favorite. Something different I tried out at the end of my workout – put a barbell on your shoulders and hop on the stair master. DEATH. But in the most awesome way possible. Try it!

Simple meals are my favorite. I’m really easy to please.

For smoothies, the thicker the better. Who’s with me?! I like to eat it like ice cream 😉 Lots of frozen fruit, spinach, ice, and little liquid is the trick.

Delicious brunch with the madre. She also got a bloody mary which was amazing – definitely ordering that next time!

Aaaaand that’s my weekend in a nutshell! Now I’m going to be running around like a chicken with it’s head cut off before my trip.

    My perfect day would be that everything would go according to schedule, but unfortunately life isn’t that way. 😉 But I’m learning as I go.
    My favorite meal for brunch would be eggs and toast. I know, boring right? But I love it. 😀

    As far as I know my family and I might be going to a family camp later this summer, but we’ll see how it goes. Otherwise not much, but I wish there was something going on though.

  5. I’m taking classes this summer, so no “vacation” for me, but I am still looking forward to the amazing Cali weather. Although Florida weather certainly gives ours a run for its money…

  6. My favourite day consists of one long hard run, a shower, some yoga, and reading books by the rain.

    I just feel that after exercise my day is complète and i can enjoy thé atmosphère. 🙂
