Strawberry-Apple Cinnamon Protein Muffins

I always say I’m going to start coming up with more healthy recipes and then….it never happens. I love to bake though, and especially make my own homemade healthy protein bars. I love my store bought bars but dang, they can get expensive. I’m all about saving money where I can, and making your own protein treats are definitely the way to go.

I finally had a chance to come up with a new recipe the other day on my day off. I basically threw a bunch of ingredients that I had at home into a bowl, mixed it, added in some chocolate chips, and luckily it was a success! I’m so professional. At least I’m honest, right? I’ll never be a legit chef, but I can pretend 😉

These muffins have almost an equal amount of carbs and protein, and very low fat – perfect for pre or post workout. If you’re eating it as a snack or for dessert, topping them with some sort of nut butter is always recommended for those extra healthy fats and to make it more satisfying.

  • 2.00 scoop protein (I used Slap Strawberry – highly recommend for that extra strawberry taste!)
  • 1.00 cup (227 g), Greek Yogurt
  • 12.00 tbsp Egg Whites
  • 2.00 tsp cinnamon, ground
  • 100.00 g Strawberries
  • 80.00 g Gala Apple
  • 30.00 g Chocolate Chips
  • 1.50 cup Rolled Oats
  • 2 tbs coconut flour

Mix all ingredients together, place into muffin tin, and bake at 350 for 17 minutes. This recipe makes 12 muffins and the macros for ONE MUFFIN are: 100 cals, 2f, 12c, 10p.

Macros may vary depending on the type of protein and other ingredients you use.
