Paleo Pumpkin Protein Bars

Remember those gluten, dairy, and egg free protein bars I posted last week?

Well, I decided to play around with different types of flour, and I ended up making a “paleo” version of the protein bars. I mean, I guess if you’re super strict you wouldn’t consider the protein powder paleo, but other than that, they are.

Gotta give different options for different dietary needs! I actually think these are my favorite yet. I know I said the other one’s were, but these are a little bit more… moist. Yeah, I know that word urks people, but no other way to describe it.



  • 1/2 C. Applesauce
  • 2 tsp. cinnamon
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • stevia
  • 4 egg whites
  • 1 can pumpkin puree
  • 1/4 c. coconut flour
  • 1/4 c. almond flour
  • 1/2 c. sorghum flour
  • 2 scoops vanilla protein (I used Genceutic Naturals Plant Head Raw Vegan)
  • 1/2 C. Vanilla Almond Milk
  • 1/4 C. chopped walnuts or pecans
  • 1/4 C. Raisins


Mix the first 11 ingredients together. Then mix in the flour, protein, and almond milk. Lastly, fold in the nuts and raisins.

Bake at 350 degrees for 35-40 minutes.

Makes 24 squares.


    1. I love that you put applesauce in them! Great idea! Unfortunately pumpkin season is over here and we don’t have canned pumpkin – I might just try with sweet potato.
