What I’ve Been Eating

I’ve been seriously slacking on my food prep. GASP, I know. It sucks when I do that, because then I’m scrounging around trying to find food fast because either I’m starving, or I’m running late. Then I have to come up with weird combinations of food. Or spoon peanut butter out of the jar.

This is why food prep is a life saver for me! Especially since I’ve started a new job, and will be starting another one next week. I’m blessed. More details on that later 😉

Anyway, lets see what I’ve been stuffing my face with this past week, shall we?


Protein pancakes! I haven’t made any in a whileeee, mostly because I’ve had no time and I’m lazy as shit. But, they were certainly delicious. I kind of throw random ingredients into a bowl and it works. Always a combo of coconut flour and oat or almond flour, applesauce, egg whites, cinnamon, and stevia.


Tilapia, shrimp,veggies. I actually like tilapia, and no, I don’t care if it’s not the best fish.


I’m literally obsessed with salmon lately. I crave it all the time. On a salad with some feta or goat cheese – perfecto.


Grilled chicken, japanese sweet potato (MY FAVORITE), and roasted brussels.


Veggie omelet topped with avocado with a side of red potatoes in coconut oil.


SUJAAAAA. I won a giveaway on Gina’s Blog and they sent me 18 juices, a shirt, and a workout headband! Obsessed. I’ll probably do a review on all of the juices? So many. So awesome.


Can you see a pattern in my meals? I like easy and tasty.

This. Delicious. Turkey burger topped with avocado, with a side of butternut and kale sautéed in coconut oil.


More juice! (No, I didn’t eat this. Ha.)


Brown rice with black beans, and zucchini and shrimp in olive oil. Un-pictured wine on the side, too.


Early morning photos are the worst. Coach’s steel-cut oats with via seeds, peach, and peanut butter.


Salad with all the fix ins – cucumber, radishes, shaved carrots, quinoa, turkey burger, and ginger miso dressing.

    1. I need to get on the food-prepping again, because it works so well for me. Having food readily available when I’m lazy? Or especially just cut up and washed, to grab and cook up really quick. My favourite meal lately has gotta be “snack plates” with healthy foods but still a ton of variety, it’s so fun to eat haha.

    1. I’m with you on the easy & tasty meals! I haven’t done much food prep recently but I want to get back into the swing of it – I love having something in the freezer I can just dig out, defrost & GO 🙂

    1. I definitely have to food prep, but I do mine daily. In the morning I just prep most of what I need for the day, but I always have easy fixings on hand too!

    1. I crave salmon all the time too. Unfortunately my husband doesn’t like the smell so I can’t cook it home. It’s now my go-to order whenever we go out to eat. And I’ve never tried a japanese sweet potato before, but it looks delicious. I’ll have to look for it next time I’m in the grocery store.

      Fav meal lately has been oats topped with JUSTIN’S nut butter and fruit. Seriously the best. So simple but it’s delicious. My mom’s pizza is also a fav…I may or may not have eaten half of it yesterday. #oinkoink

    1. Looking tasty! I do food prep (a lot!) because I work (a lot!) and I like eating real tasty food 🙂 If I don’t food prep, then my go to is always carrots, celery, and peanut butter (or any other nut butter by the spoonful…) 🙂

    1. Yum! Everything looks so colorful and delicious. I haven’t cooked brussels in a while, need to do that! I like tilapia too, you can make that fish taste like anything you want.

      I usually try to food prep my proteins. If I don’t, lunch doesn’t turn out so well…
