YOU GUYS. This is probably one of my favorite recipes I’ve ever made. For some reason, I always want to bake with bananas. I buy a shit-ton of naners, eat some normally, freeze some, and then let some sit so that they get super brown and ripe. Then, it’s time to bake!
Banana bread reminds me of my childhood, especially around this time of the year. Growing up right around the holidays, our neighbor would bake everyone on the block homemade chocolate chip walnut banana bread and it was always so, so delicious. I remember exactly how it tasted, too. Melt in your mouth, sweet, soft, and just to die for.
I always like to venture out and try to make a healthier version, one with ingredients that don’t include butter, sugar, and may add things like yogurt and protein powder to up the protein content.
I do believe you MUST… literally must… enjoy the real stuff around this time. Come on ya’ll, you only live once. BUT when you want banana bread but would like some with better macros and maybe some lighter ingredients, then definitely try this recipe out. My boyfriend was even a huge fan, so it passed the boyfriend test!
- 2.5 ripe bananas
- 1 cup of oat flour
- 2 TBS coconut flour
- ¾ cup + 2 TBS protein
- 1 cup of 0% fat Plain Greek yogurt
- ⅓ cup egg whites
- Stevia to taste
- 1 teaspoon of baking soda
- ¼ tsp salt
- Walnuts + chocolate chips
Preheat oven to 375. Mix all the ingredients together except walnuts and chocolate chips – I do wet ingredients first and then dry. Add walnuts and chocolate chips to your liking. Pour mixture into a dish, I used a 5 X 9 loaf dish. Lastly, bake for about 30 min until a fork or toothpick comes out clean.
