Fluffy Pumpkin Protein Cake

October 14, 2014

Okay, so I’ve posted quite a few protein bar recipes using pumpkin. What can I say, it makes a great baking ingredient! Plus, it’s now “fall” so all.things.pumpkin. right?

I’ve posted this on instagram before, and they seriously are soooo fluffy and delicious. It does seem like a lot of protein powder, but trust me. That’s what makes it even fluffier. I used whey protein (1st phorm vanilla ice cream), so I’m not sure they’d turn out the same with vegan protein.

    1. What size was your can of pumpkin? I have several different sizes in my pantry but don’t want to use too much or too little.
