Fluffy Pumpkin Protein Cake

Okay, so I’ve posted quite a few protein bar recipes using pumpkin. What can I say, it makes a great baking ingredient! Plus, it’s now “fall” so all.things.pumpkin. right?

I’ve posted this on instagram before, and they seriously are soooo fluffy and delicious. It does seem like a lot of protein powder, but trust me. That’s what makes it even fluffier. I used whey protein (1st phorm vanilla ice cream), so I’m not sure they’d turn out the same with vegan protein.



  • 1/2 c applesauce
  • 2 tsp cinnamon
  • 2 tsp pumpkin pie spice
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Stevia to taste
  • 4 large egg whites
  • 1 can pumpkin purée


Mix above ingredients then add:

  • 1/2 c oat flour
  • 1 tbs coconut flour
  • 170 g whey protein
  • 1 ounce chopped walnuts

Pour into a 9X13 in pan prayed with cooking spray

Bake at 350 degrees for 30 min

Cut into 24 squares once cool

Macros may vary depending on the type of protein you use.
