Chocolate Cherry Almond Protein Muffins

I feel like chocolate is so stereotypical, mostly with women. Women tend to “crave” chocolate, and I always hear them saying how they can’t live without it.

Me? Eh. I could live without it. Sorry.

I’d much rather have a spoon and a jar of peanut butter…to the face.

Or in this case, almond butter.

Chocolate did sound good though, so I combined that with the almond butter and some cherries to give it a fruity kick.

Every time I have made muffins in the past, half of the dang muffin ended up sticking to the pan. It. Never. Failed. So I decided to buy cupcake liners, and why the heck haven’t I done this in the past?! They’re much easier to take on-the-go, too.

Ingredients

  • 1/2 C. applesauce
  • 1/2 tsp. cinnamon
  • 1 Tbs. ground flaxseed
  • 1 tsp. almond extract
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 10 drops cherry stevia (optional)
  • Powdered stevia
  • 1/8 tsp. salt
  • 1/2 C. almond milk
  • 3 egg whites
  • 1/4 C. coconut flour
  • 1/4 C. almond flour
  • 2 Tbs. almond butter
  • 2 Tbs. unsweetened cocoa powder
  • 1/2 scoop (25g) chocolate protein powder
  • 1/3 C. cherries
  • 1/4 C. chopped almonds

Directions

Mix the first set of ingredients together and mix well. Then mix the next set of ingredients. Place about a spoonful of batter into cupcake liners – highly recommended, or they will stick. Top with a raw almond in the middle (optional).

Bake at 350 for 35-40 minutes. Makes 11 muffins.

    These sound dahhhhlicious!! I have a problem with my pans to, but wax paper also works great. Hmmm my favorite flavor combo? Mint chocolate chip or chocolate banana walnut …guess I’m the stereotypical gal hehe

    I’ll take a peanut butter jar and a spoon or a bag of salty chips over chocolate any day…

    That being said, these actually sound delicious! And they look super dense which (in my opinion) is the best way to have a muffin. (:

  3. SILICONE muffin/cupcake cases are the way to go. Seriously. You don’t need to spray/grease them, and you don’t lose ANY cake-ey goodness to the case. Life Changer. These look so delish…as all things with AB tend to be :). I just made banana lentil cupcakes ( don’t knock) from Proteinbakes.com, and ummm, ill be making them again in the real near future. Ah-Mazing.

  4. Luci and I were just talking about our sweet tooth. I always need something sweet after a meal, so healthier chocolate recipes are very important to have on hand. Or chocolate cake. LOL!
